Pilot initiative opens Kouma Dining Facility to Army Civilians beginning Oct. 1

Fort Knox, Ky. — In a continued effort to bring healthy dining options to the forefront of readiness, Kouma Dining Facility will open to Army Civilians beginning Oct. 1 as part of a 120-day pilot program.

Following the annual Military Nutrition Environment Assessment Tool survey, Installation Food Program manager Maribel Williams said her team saw an opportunity to leverage the upcoming holiday season and bring healthier meals to DA Civilians at an affordable rate.

While Kouma usually opens when Cantigny Dining Facility closes for annual maintenance, Williams said both Cantigny and Kouma will remain open this year. Additionally, Kouma will also serve standard Thanksgiving staples on Nov. 25. This option will focus strictly on food service for service members and Department of the Army (DA) Civilians only. It is not intended to replace the traditional, festive post Thanksgiving Meal also scheduled for Nov. 25 at Cantigny DFAC, which will feature remarks from post leadership, a cake cutting, and unit leaders serving attendees and their family members.

“This initiative will provide an opportunity for the Civilian population to have more healthier choices, closer to work,” said Williams. “If they can get out of the office for lunch, rather than going off post or to more expensive, less healthy eateries, they can come enjoy a healthy sit-down meal at Kouma.”

All Kouma services and meals will be open to Civilians during normal service hours, which includes access to the complementary salad bar, main entrees and sides, and a complementary dessert.

Service hours and cost: Breakfast is served from 6 to 8 a.m., cost: $4.50 Lunch served from 11:30 a.m. to 1:30 p.m., cost: $7.25 Dinner served from 5 to 7 p.m., cost: $6.25

Customers must present their Common Access Card at the register and can pay with cash, debit or credit card.

Williams said she hopes to have a successful pilot so they can continue the initiative beyond the 120-day period.
